AUTHENTICITY ON EVERY PLATE
Dining at Hot Springs
Meals at Dunton are prepared as if for a small household, not a dining room. The kitchen works quietly in the background, adjusting to the day, the season, and the people at the table.
The food is elegant without being formal--carefully cooked, thoughtfully composed, and served in a way that feels personal rather than programmed.
BY THE SEASON
Our kitchens let ingredients lead. Spring brings wild greens and fresh fish from cold rivers. By late summer, tomatoes warm from the garden and fruit reaches its peak.
As autumn and winter arrive, the table turns heartier--game, root vegetables, and slow cooking that fills the room.
Each season writes its own menu.

Breakfast
Mornings begin simply. Fresh eggs, house-baked breads, seasonal fruit, and coffee served warm and unhurried. Breakfast is designed to start the day comfortably--whether you're heading out early or lingering at the table.
Lunch
Midday meals are lighter and flexible. Salads, soups, breads, and familiar dishes shaped by what's available that day.
Portions are generous enough to satisfy, without pulling the afternoon out of rhythm.

Dinner
Evenings gather naturally around the table. Dinners are multi-course and served communally, allowing the meal to unfold at its own pace.
The focus stays on the food, the conversation, and the company--often lingering well beyond the last course.
